I tried out the 20-day demo version of VIRTUAL DJ Pro, but I'd like to return to VIRTUAL DJ LE.

In VIRTUAL DJ LE, click CONFIG > Info > Reset to Factory settings. Note that this resets all the settings. Also note that once this is done the 20-day demo version cannot be used again.
